The Cervia Salt Pans are one of the most original natural attractions on the Adriatic Riviera. 827 hectares of lagoons, salt pools and canals, home to pink flamingos, herons and black-winged stilts. And then there is the salt: the famous sweet salt of Cervia, the finest in Italy, used by Michelin-starred chefs the world over. This guide tells you everything.


The Cervia Salt Pans: What They Are

The Cervia Salt Pans are a nature reserve and salt production site located between Cervia and Milano Marittima. They are the only still-active salt pans on the Adriatic, with a history stretching back a thousand years.

The salt produced at Cervia is called sweet salt not because it tastes sweet, but because it has an extremely low sulphate content compared to other salts, making it less bitter and rounder on the palate.


How to Visit the Salt Pans

Boat Tour

The most evocative way to visit is the boat tour that navigates the internal canals:

Walking / Cycling Visit

There is a perimeter trail of around 12 km that follows the edges of the salt pans. It can be done on foot or by bike. Free of charge, accessible all year round.

Cervia Sweet Salt: Why It Is Special

Cervia salt differs from other salts in several chemical characteristics:

  • Low sulphate content: makes the flavour sweeter and rounder
  • Artisanal production: still harvested by hand using traditional rakes
  • IGP certification: Protected Geographical Indication
  • Used by chefs: in Michelin-starred restaurants such as Nobu, Dal Pescatore and many others

The Flamingos of Cervia

The Cervia salt pans are one of the few sites in Italy where pink flamingos stop regularly — both during migration and for extended stays.

When to see them: April to October, with a peak between May and July. Where: the southern basin of the salt pans, visible from the shores or during boat tours.

Other birds you might spot:

  • Black-winged stilt (Himantopus himantopus)
  • Avocet
  • Purple and grey heron
  • Cormorant
  • Little egret

For serious birdwatching, bring 8x42 or 10x42 binoculars.


The Salt Harvest: When and How to Watch

The traditional salt harvest takes place in September, at the end of the season. The salinari cooperative organises the Festa del Sale (Salt Festival) in late August / early September with:

  • Demonstration of hand harvesting with traditional rakes
  • Salt market with all varieties
  • Tasting of local dishes with Cervia sweet salt
  • Guided tours of the production facilities

It is one of the most authentic and least touristy events in Romagna. No booking required.


How to Get to the Salt Pans

By car: free parking at Cervia's Porto Canale. From Cervia town centre: 10 minutes on foot.

By bike: the Cervia seafront has a cycle path leading to the harbour. From Milano Marittima: 20 minutes by bike.

By train: Cervia-Milano Marittima station (Rimini–Ravenna line). Then on foot or by bike (15 minutes).


FAQ

Can you visit the Cervia salt pans for free? The perimeter trail is free. Boat tours are paid (€12–30). The Salt Warehouse is free or by donation.

Are there really flamingos? Yes, flamingos are regularly present from spring to autumn. Their presence is not guaranteed every day, but the probability is high from May to July.

Is Cervia sweet salt really better? Chemically it is different: fewer sulphates, purer crystals. Many chefs prefer it for finishing dishes. Whether it is "better" depends on your taste.

Is the salt pan visit suitable for children? Yes, it is an educational and fun experience. Boat tours are accessible from ages 3–4. The perimeter trail is also pushchair-friendly.

Are Cervia and Milano Marittima the same place? No. Cervia is the historic centre and the Porto Canale. Milano Marittima is the beach resort area, more upscale and with more services. They are about 2 km apart.
